Razor clams from Aguiño and Cambados, the seafish gatherer’s trophy, as hard to find as they are delicious.

The razor clams from the Rías Gallegas are remarkable for their exquisitely tender meat and mild flavour. They are collected by divers in Cambados and Aguiño, in a process that is both arduous and dependent on sea conditions, rendering them one of the most wanted and prized pieces. In our factory, we clean and prepare them in tepid seawater before selecting the best sized pieces (calibre 8), adding a squeeze of lemon before packaging.
